When in doubt, stir-fry! The first meal I tried was an asparagus and shrimp stir-fry over angel hair pasta. Mmmm....
Last week I picked up some and decided to try roasting it. The stars of that show were my can of extra-virgin olive oil spray and a jar of McCormick Roasting Rub - French Herb flavor (this stuff is great on veggies and meats too - thanks Fran).
I lined a cookie sheet with aluminum foil and sprayed with oil. After washing the asparagus and snapping off the ends, I laid it on the cookie sheet, sprayed it with oil and sprinkled the herbs over the top. I then baked at 400 degrees for about 15 minutes. Yummo! Sometimes I impress myself. (ha!)

mmmm, we love asparagus. Our favorite way to prepare it is drizzled with EVOO and salt then broiled for 8-10 minutes. They come out so tender and the tips are a little crispy. LOVE IT!
My BIL loves asparagus and so I started cooking it a lot when my sister got married. I soon discovered that I loved it too!
You are welcome. That French Herb stuff is good on everything. I love it on seafood too. I still can't do the aspargus thing but cooking it that way you also retained most if not all of the nutritional content. You go girl!!
